This delicious recipe is perfect for a spring or summer lunch or appetizer. Feel free to substitute the lavender balsamic for an aged balsamic if you can’t find it. You can also omit the culinary lavender if you don’t have it. Of course it won’t be nearly as “fancy” but it will still be delicious. Enjoy!

Ingredients

2 SLICES of WHOLE GRAIN BREAD, TOASTED
1 AVOCADO
1 HANDFUL ARUGULA WASHED AND DRIED
1 TBLS OLIVE OIL
1/2 TBLS LAVENDER BALSAMIC
1 TBLS PRESERVED LEMON, RINSED and DICED
SALT and PEPPER to TASTE

Directions

Mash avocado with fork and spread one half on each piece of toast and season with salt to taste. Toss arugula with olive oil and lavender balsamic. Top avocado toast with arugula mixture, salt+pepper and preserved lemons. Lemons add salty element so use salt with caution. You’ll want to use less salt than usual for seasoning the dressed arugula. Garnish with dried or fresh culinary lavender. Serves 1
